- 20 ml neutral oil
- 900 ml water

- 8 g fresh cilantro
- 6 g fine salt
Cooking method
Pan
- Cook aromatics
Cook onion, garlic and achiote in oil until soft.
- Add potatoes
Add potatoes, water and salt, then simmer until tender.
- Mash lightly
Mash part of the potatoes to thicken the soup.
- Add dairy
Stir in milk and cheese and warm gently.
- Serve
Top with avocado and cilantro.
