- 600 g cooked fava beans
- 100 g onion, finely chopped
- 2 garlic cloves, minced
- 30 ml olive oil
- 30 ml lemon juice
- 4 g ground cumin
- 140 ml water
- 8 g fresh parsley
- 5 g fine salt
Cooking method
Pan
- Cook aromatics
Cook onion and garlic in olive oil until soft.
- Add beans
Add fava beans, water, cumin and salt, then simmer gently.
- Adjust texture
Lightly mash part of the beans to thicken while leaving most whole.
- Finish
Turn off heat, add lemon juice and parsley, then serve warm.
