Ingredients

  • 180 g wheat noodles Contains gluten.
  • 70 g peanut butter or peanut paste Contains peanuts.
  • 30 ml soy sauce Contains soy and usually wheat/gluten unless specifically labeled otherwise.
  • 20 ml lime juice
  • 1 garlic clove
  • 8 g fresh ginger
  • 10 g maple syrup or sugar, optional
  • 60 ml water Add gradually to loosen the sauce.
  • 20 g scallions or cilantro, optional

Cooking method

Pan

  1. Cook the noodles

    Cook the wheat noodles according to the package directions, then drain and rinse briefly if they are sticking.

  2. Mix the sauce

    Whisk peanut butter or peanut paste with soy sauce, lime juice, grated garlic, ginger, optional sweetener and water.

  3. Warm gently

    Warm the sauce in a pan over low heat just until smooth. Add more water if it is too thick.

  4. Toss

    Add the noodles and toss until evenly coated in the peanut sauce.

  5. Finish

    Serve with scallions or cilantro. This recipe intentionally does not include sesame oil.
